A rich single source artisanal raw honey from hives on our rooftops opposite London City Airport in the heart of London’s Docklands. Our bees forage on a diverse variety of pollen and nectar sources giving our honey it’s characteristic taste. We only harvest once a year at the end of September, leaving the colony with enough stores for winter.
The honey is then extracted using a simple centrifuge force method and the frames returned to the apiary afterwards for the bees to clean up. Our honey is then minimally filtered in a traditional process that removes excess wax whilst still preserving all of the honey’s natural flavours, aromatics and micro-nutrients including pollens. All of this we do in partnership with the Bee Friendly Trust through a joint commitment to biodiversity and a shared mission:
